Boiled potatoes with tomatoes

A traditional potato meal, it is very simple to make and it a wicked alternative to mash potato. If you have ever been to an Indian wedding then you will be very familiar to this great recipe. You can eat it with chapatti”s, nans or even our old time favourite simply in a buttered cob/bap or bread.

The potatoes used are baby potatoes but recently i have used a few larger ones , like jacket type potatoes. they work really well but you just have to make sure that they do not fall apart as they can get really fluffy.

  • Prep Time : 5 to 10 minutes
  • Cook Time : 5 to 10 minutes

Instructions

<li>Peels the potatoes, chop them into thumb size pieces and par boil the potatoes till they are tender. This should take around 20 mins</li>
<li>Heat the oil in a non stick pan, keep the heat on a medium level</li>
<li>Put the mustard seeds. When they start to pop put hing and then tomatoes, salt, green chilli, garlic, turmeric powder, ginger paste and cook until the tomatoes are cooked and the oil floats to the top. This normally takes 2-5 mins depending on the heat of the pan</li>
<li>Drain the potatoes when they have softened and put them in the curry sauce, add your salt to taste</li>
<li>sprinkle the garam masala and stir the potato and sauce carefully, have a taste</li>
<li>If it is not hot (spicy) then sprinkle the red chilli powder. if it a little too spicy for you then add a little sugar or lemon</li>
<li>Once the sauce is to your taste mix the potato and sauce carefully, making sure you do not break any of the potatoes. Add a cup of water if you like the curry less dry.</li>
<li>The ingredients are all to your taste, its good to experiment with the flavors and each taste buds are different. So always start with a small amount and then add to your taste.</li>
