This recipe can be steam cooked or deep fried. Steam cooked is a healthy option and deep fried can be cooked on special occasion. Traditionally it is eaten with a spiced cup of tea as breakfast or at any time.

Wash the bottle gourd. Make a cut on the top of the gourd. This will help to hold it while peeling the skin. Care has to taken here as the gourd becomes slippery.  Shred or chop in the food processor.  Squeeze excess water and place it into a bowl. Add the flours and all the ingredients. Lightly using the hand, stir and mix. The mixture will become very sticky if it is stirred too much.

Taste at this stage.  If it requires any more ingredients i.e salt or red chili powder it can be added now. No water is used as the gourd releases water.  If you can manage,take a couple of drops of oil in the palm of the hand, take a small mixture and form a shape of a cocktail sausage.  If not the mixture can be spooned in the fryer.


In a saucepan or deep fryer heat the oil and bring it up to a medium to hot temperature. Spoon or drop the formed mixture into the oil and fry on a medium to law heat until golden brown. The muthias will start to fluff and float onto the surface.  Take them out onto a kitchen towel in a plate. This can be served hot or cold.

If however you wish to steam cook the muthias, in a steamer or if you do not have a steamer, take a large saucepan, put a metal or stainless steel bowl up side down. Put enough water and bring it to boil. Then put a greased metal plate on top of the bowl.

Put couple of drops of oil in your hands and take the mixture and form it into a big ball. Then slowly put the ball into the greased plate. Do this until all the mixture is finished.  Cover and cook for 10 to 15 minutes. Checking the water does not dry out in the saucepan.

When the muthia are cooked and cooled, Cut them into medium slices.  Take a large frying pan,heat 2 tbls Oil and on a medium heat. Take 1 tsp of mustard seeds, when they start to pop put the muthias in the frying pan and slowly stir or toss until  all the muthias and covered with the mustard seeds.




Dhudhi Na Muthias are made from bottle gourd. It is very easy to make and can be served like pakoras to your guests. It can be steam cooked or can be deep fried. This is a deep fried version

The steamed version of the muthias are also shown in the instructions. These can be eaten as a snack hot or cold with spiced tea or even cold drink.

The spices used in this recipe are double in quantity as the bottle gourd has no specific flavor[pure-recipe]
