Dum Aloo is a delicious dish, very easy to make. It is an exotic spicy dish. It can be served as a main meal or part of various variety party or wedding food. Mango powder is used in this recipe to make it( dried unripe mangoes) to give it a sour taste. It is served with hot Nan Bread or Chapattis.

In a small frying pan roast the whole garam masala and coarsely grind them. Set aside.  Boil and peel the potatoes and set them aside.  Take a saucepan add the oil and put it on low to medium heat.  Then add the asafoetida, ginger and garlic paste and cook until golden brown.  Add the potatoes and toss them. Turn the heat down at this stage to avoid burning.  Add the turmeric, salt ground garam masala, tomatoes and mango powder.  Add a little water to loosen the texture. Cover and cook for 6 to 7 minutes.  (This is a dry dish it you prefer you can add a little more water).    Finally add the coriander and serve hot with Nan or Chapattis.
